In this recipe, we used ๐๐ฒ๐ฟ๐ฏ๐ฌ๐๐ผ๐ฟ๐ฒโข๏ธ ๐ฃ๐น๐ฎ๐ป๐ ๐ฃ๐ฟ๐ผ๐๐ฒ๐ถ๐ป ๐๐น๐ผ๐ฐ๐ธ in place of paneer for a vegan-friendly paneer curry! This curry is thick and creamy with a kick of spice that flavours the protein block perfectly.ย
INGREDIENTS
- Hot water โ 2 cups
- Salt โ 1 tsp
- Turmeric โ 1 tsp
- 1 block ofย ๐๐ฒ๐ฟ๐ฏ๐ฌ๐๐ผ๐ฟ๐ฒโข๏ธย ๐ฃ๐น๐ฎ๐ป๐ ๐ฃ๐ฟ๐ผ๐๐ฒ๐ถ๐ป ๐๐น๐ผ๐ฐ๐ธย 250g, cut into 2cm cubes.

Marinade:
- Finely ground cashew paste โ 3 tbsp
- Turmeric powder โ 1/2 tsp
- Coriander powder โ 1/2 tsp
- Cumin powder โ 1/2 tsp
- Garam masala powder โ 1/2 tsp
- Chilli powder โ 1/2 tsp
- Ginger garlic paste โ 1 tsp
- Chickpea (Besan) flour โ 1 tsp
- Lemon Juice โ 2 tsp
- Fenugreek leaves โ 1 tsp
- Salt โ 1/2 tsp
Gravy:
- Oil โ 3tbsp
- Bay leaves โ 2
- Finely chopped onions โ 1/2 cup
- Ginger garlic paste โ 1 tsp
- Turmeric powder โ 1/2 tsp
- Coriander powder โ 1/2 tsp
- Cumin powder โ 1/2 tsp
- Garam masala powder โ 1/2 tsp
- Chili powder โ 1/2 tsp
METHOD
Marinade:
- Add all of the ingredients for marinating to a bowl.
- Mix well to form a paste.
- Cut protein block into cubes and add into marinated paste.ย Tip: Prick protein block gently to absorb masala.
- Diced onions & capsicums โ 1 cup.
- Add diced onions & capsicums into paste.
- Marinate Plant protein block, onions and capsicum for 2 โ 3 hours.
- Roast fry marinated protein block & vegetables till it turns golden brownย or, bake it at 200ยฐC till it turns golden brown.
Cooking:
- Add all of the ingredients for gravy on a cooking pan and sautรฉ them well.
- Add 1/4 cup of Ginger chopped julienne, 2 cups of tomato puree and sautรฉ them well.
- Add 1/2 tsp of salt, 1/2 tsp fenugreek leaves and stir until the oil separates. Add 3 tbsp of cashew paste, mix well and cook for 5 minutes.
- Add marinated protein block and vegetables into the pan and stir them well.
- Add 1 tsp of lemon juice, 1/2 cup of water and cook with pot lid on for 10 minutes on medium heat.
- Garnish with finely chopped coriander leaves.
- Serve with rice or indian bread of your choice!
