HerbYvore Thai Green Curry Flavoured Croquettes

Spice up your #Evening with our Thai Green Curry Flavoured Pea Paneer Croquettes specially crafted by our In-house chef @N-Anusiya. The perfect bite-sized evening snack, and the best way to help you de-stress after a long day at work.

Ingredients

  • 1 pack of HerbYvore pea paneer grated
  • 2 red onions finely chopped
  • 1tsp ginger garlic paste
  • 1 cup grated sweet potato
  • 2 tbsp vegan green curry paste
  • 1/3 cup chopped coriander leaves
  • ½ cup chopped spring onion
  • 2 tbsp plain flour
  • 2 tbsp corn flour
  • 1 cup breadcrumbs
  • Cooking Oil as required
  • Salt to taste

Cooking Method

  • Heat a skillet with 1 tbsp oil.
  • Add in the onion and sauté until translucent.
  • Add in the ginger garlic paste.
  • Sauté it for another 2 minutes.
  • Its time for the grated sweet potato to go in.
  • Stir fry until the sweet potato is cooked, this will take about 5 minutes.
  • When that is done, add in the grated paneer and saute for 2 minutes.
  • Mix in the green curry paste and give it a good mix.
  • Sauté this for another 5 minutes until it emits a nice aroma. Add in the chopped coriander leaves and spring onion. Mix it well, give it a taste and adjust accordingly as the salt level differs with different brands of curry paste.
  • Arrange the plain flour, cornflour slurry (add 5 tbsp of water and mix it into a watery paste) and breadcrumbs accordingly to make the croquettes.
  • Use a small ice cream scoop to scoop the mixture and shape it.
  • Dip each croquette in the flour, pat off any excess, then coat it in the cornflour slurry before coating it in the breadcrumbs.
  • Heat a frying pan with sufficient oil to deep fry.
  • Fry the croquette until golden brown and serve it with peanut sauce.
  • Alternatively, it can be shallow fried or baked in the oven or even air fried!

PEANUT SAUCE RECIPE

Ingredients:

  • ½ cup sugar free peanut butter
  • 2 tbsp tamari/soy sauce
  • 1 tbsp rice vinegar/balsamic vinegar
  • 2 tbsp brown sugar/ coco sugar
  • 1 tsp chilli paste or spicy chilli sauce
  • ½ tsp lime juice
  • 3 cloves garlic grated or pressed
  • 1 tsp grated ginger
  • 1 tsp finely chopped coriander leaves
  • 1 deseeded bird’s eye chilli finely chopped

 Cooking Method

  • Mix all the ingredients in a bottle, cover it and give it a good shake. Taste it and season accordingly. Add warm water if it’s too thick but then again it’s up to your desired consistency. Enjoy!
