HerbYvore Fiesta Pea Cheese Tacos with Guacamole

FIESTA PEA CHEESE TACOS WITH GUACOMOLE

HerbYvore Pea Cheese Tacos with Guacamole is not only delicious, but also has a lot of great flavours. This recipe is perfect for your friends this weekend so you can surprise them with how much flavour can these plant-based tacos have!

Ingredients

  • 10 Pieces taco shells
  • 1 pack of Herbivore peppered pea cheese
  • 1 tbsp nutritional yeast
  • 1 tbsp soy sauce
  • 1 tsp balsamic vinegar
  • 1 tsp garlic powder
  • 1 tsp chilli powder
  • 1 large yellow onion chopped
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 4 pods garlic crushed
  • 1 tsp cajun spice blend
  • 1 tsp paprika powder
  • 2 tbsp sundried tomato paste
  • 1 tbsp mixed herbs
  • Salt to taste
  • Olive oil

 Method

  • Cut the pea cheese into 1.5 cm small cubes.
  • In a bowl mix the nutritional yeast, soy sauce, balsamic vinegar, garlic powder and chilli powder.
  • Coat the cubed paneer with this mixture and leave it to rest for 30 minutes.
  • Heat a pan. Once hot, coat it with olive oil. Spread the seasoned pea cheese and fry it till the sides crisps up. Remove from pan.
  • In the same pan, add another tbsp of oil and sauté the onion until it turns translucent. Add in the crushed garlic and the bell pepper, sauté till its half cooked.
  • It’s time for the cajun spice, paprika powder, tomato paste, salt and the mixed herb to get into the pan. Give it a good stir.
  • Drop in the fried pea cheese and mix it in well to make sure that everything in the pan is well coated with the seasonings.
  • Allow it to cook for another 5 minutes and our taco filling is ready.

GUACOMOLE RECIPE

Ingredients

  • 2 Avocados peeled, pitted and mashed
  • 1 lemon juice
  • 1 onion chopped finely
  • 3 tbsp chopped coriander leaves
  • 1 large tomato chopped finely
  • 2 pods of garlic crushed
  • 1 tsp chilli flakes
  • Salt to taste

Method

  • Mix all the ingredients, give it a taste and adjust accordingly. Refrigerate for at least 30 minutes to bring out the best flavours before serving.

 

To assemble the taco, follow directions to heat up pre-packaged taco shells. Once that is done, scoop #some pea cheese mixture and carefully fill the shell. Top it with some guacamole and serve.
